
This is a delicious version from my friend Cassie. She is a wonderful cook as well as an amazing gal!
Honey Lime Chicken Cordon Bleu: Serves 4
Preheat oven to 375.
4 boneless, skinless chicken breasts, pounded thin
8 thin slices deli ham
8 thin slices swiss cheese
1/2 C honey
1-2 limes
1 stick melted butter in shallow bowl
1/2 C bread crumbs mixed with 1/2 C shredded parmasean cheese in shallow bowl
After pounding chicken breasts, lay flat squeeze lime juice over them. Drizzle honey generously. Add ham and cheese slices, then fold over. Dip both sides in butter then dredge in breadcrumb mixture.
Heat to medium high large skillet with 2 TB EVOO. Sear both sides of chicken, then place in baking dish. Bake for 40 minutes.
